After the great day at the zoo and Noby’s only nap being the ride home, we are definitely in for the night!! I was looking for something simple to make for dinner and I remembered a crock pot recipe I found not to long ago. Megan is away and Keith is hanging out with us tonight. There is nothing better then trying a new recipe when Keith is over. I get a true second opinion, cause we all know Ichiro will eat whatever I make!!
Crock Pot Bourbon Chicken
2 lbs boneless chicken, cut-up into bite-sized pieces
1-2 garlic cloves crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 C brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 C water
1/3 C soy sauce
2 tbsp of corn starch
Mix all ingredients into your crock pot. Cook on high for 2-3 hours or on low for 4-5 hours. Serve over rice.
It was so nice out today that we knew we wanted to do something outside with Noby. It was a perfect day for the zoo. We first thought about going to the ghetto zoo that’s up the street from us but then decided to head to Dorchester, to the Franklin Zoo. The Franklin Zoo actually has zebras, gorillas, and giraffes. All morning we talked to Noby about going to see the zebras and giraffes. He seemed to be really excited! I almost cried when we got to the gates and there was a sign that said it was to cold for the giraffes to be out. They said we might be able to see them by the barn but they have the option to go in and out, so it was a 50/50 chance. In the end we got to see them from afar.
Noby had so much fun, he was so cute saying things like, “Hello Zebra” and “Bye bye Gorilla.” He was also jumping around when he saw the kangaroos, it was great!
