Aunt Sherry’s Chicken Linguine with Garlic
1 cup Olive Oil
1 Tbls Crushed Red Pepper
5 cloves Garlic (chopped fine)
4 whole Boneless, Skinless Chicken Breast – cut into julienne strips
3 cups Chicken Broth
Juice of 3 Fresh Lemons
2 lbs Linguine
Fresh grated Parmesan Cheese
Parsley and Lemon Slices for garnish
Warm Olive Oil, pepper and garlic over medium heat. Add chicken, stirring to keep separate. Cook until white. Add Chicken Broth, simmer at least 5 minutes. Add Lemon Juice, simmer at least 5 minutes. Add cooked linguine. Toss to coat. Turn onto serving platter. Garnish with cheese, parsley and Lemon Slices.
