So Noby and I often show up at Lizzy’s while she’s pulling a warm batch of muffins from the oven. Perfect planning I know!! Anyway a while ago I asked her for the recipe but just never made them. This morning Noby and I decided to try to make our own. And I have to say they came out pretty darn good!!
So the best thing about this recipe is that you can make the batter and keep it up to a week in the fridge. So you can have warm muffins any day of the week.
2 eggs
4 cups of bran flakes (raisin bran)
2 cups buttermilk
1 tsp salt
1/2 cup veg oil (or apple sauce)
1 cup chopped walnuts
2 1/2 tsp baking soda
1 1/2 cups sugar
2 1/2 cups flour
Mix and bake at 400 for about 20 minutes.
The batter, in a air tight container to store in the refidge.
