Today for lunch I made some Weight Watcher Hearty Chili. My mom has been making this for a while, so I thought it was about time to try it out myself. The recipe makes A TON of chili and I’ve been told it freezes great!! The pot makes about 20 1 cup servings and each serving is only 1 point!! So eat away!
Hearty Chili
10 ounces extra lean ground turkey
1 medium onion, diced
2 (28 ounce) cans diced tomatoes
2 medium zucchinis, diced
2 medium yellow squash, diced
1 (15 ounce) can black beans, rinsed and drained
2 (15 ounce) cans fat free, reduced sodium beef broth
4 celery stalks, diced
2 green bell peppers, diced
1 (1 1/4 ounce) package dried chili seasoning
Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the turkey and onion and saute until browned, about 5 minutes. Transfer the browned turkey and onion mixture to a large soup pot and add the tomatoes, zucchini, squash, beans, broth, celery, bell peppers, and chili seasoning. Bring to a simmer over medium high heat. Continue to simmer until the vegetable are tender, about 30 minutes.
