For a while now I’ve been meaning to clean up my website. Kerry made a comment awhile back that my recipes were hard to find and that I mostly took pictures of Noby. Well it’s true, I mostly take pictures of Noby (and that won’t change) but I have tried to make it easier for everyone to find my recipes. On the right hand side of the site, I’ve added a box that will list all the recipes. Go ahead, take a look… It might take me a few weeks to find all the old recipes, but it’s a start. I also want to shout out to the girls at “SlobRecipeExchange; what the cool kids eat!” You guys have some mad recipes that I hope to try soon! Thanks for adding me as a link on your page!! So tonight I’m adding a new recipe to the site and hopefully I will keep it all organized. It’s an oldie but a goodie… Tonight, on this election night, for dinner we had Taco Rice. The first time I made this, Kerry and Ichiro were amazed that it looked exactly like the picture in the book. *cough cough* I AM GOOD!!

Taco Rice
1 lb ground beef (we use ground turkey)
1 envelope taco seasoning mix
1.5 cups water
1 cup salsa
1 cup frozen corn
1.5 cups uncooked instant rice
¾ shredded taco-seasoned cheese
1 cup shredded lettuce
1 medium tomato, chopped
Sour cream, if desired
1. Cook beef in skillet over medium heat 8 to 10 minutes, stir occasionally, until brown; drain.
2. Stir in seasoning mix, water, salsa, and corn. Heat to boiling; stir in rice. Boil 1 minute; remover from heat. Cover and let stand 8 minutes.
3. Fluff rice mixture with fork; sprinkle with cheese. Cover and let stand 1 to 2 minutes or until cheese is melted. Sprinkle lettuce and tomato around edge of skillet. Serve with sour cream.
